Fresh and Simple Chickpea Salad

Chickpeas, also called garbanzo beans, are an awesome meatless protein source.  Not only are they filled with heart-healthy fiber, but they also contain iron, phosphate, calcium, magnesium, vitamin K, and other essential vitamins and minerals.  Helping to fight unhealthy conditions like high cholesterol, high blood pressure, and diabetes, chickpeas are an excellent legume to add to your diet.

My chickpea salad recipe includes other healthy, antioxidant-rich ingredients, such as spinach and red pepper.  Fresh, crispy ingredients coupled with spicy garlic and cilantro give this chickpea salad complimentary textures and a bit of spice.  The best part of this recipe is that it is super quick and simple, and it can be easily doubled or tripled to make extra portions for later!

What You'll Need:
  • A handful of spinach
  • 1 cup red cabbage, sliced into thin strips
  • 1/4 cup red onion, diced
  • 1/4 cup red pepper, diced
  • 1/3 cup drained and rinsed chickpeas
  • 1 rounded tbsp. crumbled feta (optional)
  • 2 rounded tbsp. cilantro, chopped
  • 1 clove garlic, crushed
  • 2 tbsp. red wine vinegar
  • Salt and pepper to taste
  • 1 tsp.  Extra virgin olive oil (optional)
  • Mixing bowl and spoon
What You'll Do:
  1. Rinse, dry, chop, and crush to prepare all of the above ingredients.
  2. In your mixing bowl, toss together the spinach, red onion, red cabbage, red pepper, and chickpeas until well mixed.
  3. Then, add in the cilantro, feta, garlic, and red wine vinegar.  If you would like, you can add in a tsp. of extra virgin olive oil as well or as a substitute for the feta cheese.
  4. Thoroughly mix all of the ingredients together.  Sprinkle salt and pepper to taste, and once again, thoroughly mix all of the ingredients.
  5. You can go ahead and enjoy this easy salad right away, or feel free to chill it for a little bit.  This chickpea salad tastes delicious either way!
