Fast and Easy Leftover Grilled Chicken Breast with Spinach, Tomatoes, and Onions

One benefit of leftovers is that you have a quick, easy meal the next day with very little prep.  However, eating leftovers day after day can leave you dreading a meal, even if it tastes delicious.  To prevent the monotony of leftovers, don't be afraid to get a little creative.  This simple leftover grilled chicken dish proves that a leftover can turn into a brand new meal without needing a lot of time or ingredients!  (Note: This will be just as good with fresh grilled chicken breast, too!)

What You'll Need:

·         Leftover grilled chicken breast, cubed (I had mine spiced with salt, pepper, garlic powder, Mrs. Dash Original seasoning, and Italian seasonings but go ahead and season yours however)
·         A large handful of spinach
·         About 1/2 cup to a cup of halved cherry tomatoes (go ahead and use large tomatoes if you have them - just slice them up)
·         1 Garlic clove, crushed
·         1/4 Large red onion, sliced
·         1 Tsp. extra virgin olive oil
·         Salt, to taste
·         Pepper to taste
·         Non-stick frying pan with lid
What You'll Do:
  1. Heat the olive oil in the pan on medium-low heat until hot.  Test it by sprinkling the pan with water - if the water sizzles, you are good to go.
  2. Lower the heat and throw in the red onion slices, tossing them around in the oil.  Let them sauté until they are just beginning to soften.
  3. Add the tomatoes along with the crushed garlic clove.  Mix all of the ingredients and heat until the garlic becomes fragrant.  (Warning:  If you weren't hungry before, this smell will make you starving.  But don't worry; just a few more steps!)
  4. Toss in the chicken.  Cover the pan with the lid until the chicken warms up.  On my stove, it took about 2 minutes, if that.  Be sure that the heat is on low as you just want to warm the chicken up, not fry it. 
  5. Once the chicken is warm, add the spinach on top.  Once again, cover the pan with the lid to let the spinach shrink.  When the spinach has shrunk down, toss all of the ingredients together.  Add salt and pepper to taste, turn off the stove, and enjoy warm!
