Monday Morning Munchies - Lemon and Blueberry Parfait

Time and time again, the mantra "breakfast is the most important meal of the day" is repeated, and this little phrase holds so much truth.  Breakfast helps kick-start our metabolism and gives us energy to perform our daily tasks, so think twice before skipping it!

As important as breakfast already is, adding healthy, antioxidant-rich and fueling ingredients makes the meal even more beneficial; they just simply help keep you going. 



Lately, certain life obstacles have put me in a downward shlump, but this morning marked a brand new week full of good feelings and good news for me, so I wanted to celebrate with an invigorating, filling, and energy and life-boosting breakfast treat.  Using refreshing lemons and nature's super-food, blueberries, I created a Lemon and Blueberry Parfait that helped to energize, motivate, and satisfy me...I also used a fancy glass to celebrate the good morning and to do something nice for myself ;).  I am learning to do things for the good of my health and my own happiness, so I had some fun with this breakfast by making it lovely and tasty using flavors and textures that I enjoy, purely for my own personal delight.  Who says food can't bring you happiness?! :)

If you need a little pick-me-up or just want a refreshing start to your day, try out this quick and easy parfait recipe!

Ingredients:
  • 1 6 oz. container of lemon yogurt - I used Chobani's Greek Lemon yogurt
  • about 1/3 to 1/2 cup frozen blueberries
  • a handful of fresh blueberries
  • 1 tbsp. almond milk
  • 4-5 ice cubes
  • 2 tbsp. old-fashioned rolled oats
  • 1 tbsp. sliced almonds
  • 1 tsp. lemon zest
  • a sprinkle of coconut shreddings for decoration
  • a fancy shmancy pretty glass for fun
Recipe:

On a frying pan, toss together the oats and almonds, and heat on medium heat.  Every once in awhile, check on the oat and almond mixture and stir.  Toast the oat mixture until they are browned; you will begin to smell a warm, nutty aroma when they are finished.  Toss about 2-3 tbsp. of the yogurt into a blender or magic bullet along with the dash of milk, ice cubes, and most of the frozen blueberries (I saved a few of the frozen blueberries for the bottom of the parfait to add a chilly, refreshing "bite").  Blend everything together until thick and icy - you can add more ice cubes if need be.  Now comes the fun part where you get to do what you want - layering!  This is how I layered my beautiful concoction from the bottom going up - a few saved frozen blueberries, lemon yogurt, icy blueberry-lemon yogurt slush, oat and almond mixture, fresh blueberries, and sprinkled lemon zest and coconut shreddings to top it all off!  A slice of lemon adorned the side of my parfait for a short while - I like lemons too much and it was eaten pretty quickly...
