Late-night Snack Stew

Not every stew has to be a heavy, hearty lunch or dinner meal - this one is a complete dessert snack!  Simply whip all the ingredients together with little effort on your part, just like a stew.  Here is a really easy, refreshing, and healthy snack that is filling and not loaded with sugar, perfect as a late-night munchie for those days where going to bed is not an option until you fill your belly...I seem to have those rather frequently!

  • 1 cup unsweetened almond milk
  • 1/4 cup blueberries 
  • 1/4 cup blackberries
  • 1 kiwi, chopped
  • 2 tsps. sliced almonds
  • cinnamon to taste

Are you sure you can handle this one? All right - if you say so! Put the berries and kiwi slices in a bowl. Pour in the almond milk. Top with cinnamon and almonds. Whew - what a doozy, right?! 

Yes, this is super easy and barely requires any thought, but I was looking for a snack and didn't want anything too heavy for the night, but definitely needed something a little filling.  This fit the bill and I wanted to share it with all of you in the same predicament. Go ahead and substitute with any other berries or even a few banana slices. If you are enjoying this before bed, just make sure to stick to these low-sugar berries and sleep-inducing bananas as to not give yourself a sugar high!
