Nutty Peaches 'n Cream Yogurt Bowl

Good Saturday morning and happy weekend!

For everyone who is intimidated by cooking in trepidation of making mistakes or failing at a recipe, you never know when a mistake or failure can turn into something delicious! Yes, today my breakfast "failure" might not be so drastic that it could have possibly turned out inedible (after all, the texture was the only component that strayed from my desired goal), but it still didn't turn out how I had originally planned it to.  Nevertheless, it was delicious!  Numerous times, I've had my own recipes and concoctions turn out differently than I had originally expected or even completely flop to where it was basically inedible (my first time using dried powdered ginger...definitely don't put in 2 full tablespoons in a relatively small dish...), but these little shortcomings haven't stopped me yet!  As the famous saying goes, you learn from your mistakes...oh the truth in that!  I do think some people just have a knack for cooking, baking, and combining ingredients, but with practice, failing, and trying again, anyone can become a better cook!

Today for a very quick breakfast, I was feeling a peach yogurt breakfast bowl.  I absolutely love the taste and thick, fluffy texture of plain Greek yogurt, so I decided to wonderfy (no, there is nothing wrong with creating your own adds a little whimsy to your life and baffles people to the point where they check on their phones just to see if it really is a word...mission accomplished, teehee) it by blending it with fresh peaches.  Well, my blender deflated my creamy, fluffy yogurt and turned it into a liquidy soup.  Oh well, no time to make something else, too wasteful to throw it away, and it at least tasted exactly like I wanted it to - must make do with what I had!

Moral of the story, be adventurous, have fun, and don't be scared to experiment in the kitchen, with or without a recipe.  Apply this mantra to your daily life activities - you never know what you will create!

  • 1 cup plain Greek yogurt - I prefer Fage, but use whichever you like
  • 1 deliciously ripe peach
  • 1 tbsp. old-fashioned rolled oats
  • 1 tbsp. ground flax seed
  • 1 tsp. sliced/crushed almonds
  • 1 tsp. crushed walnuts
  • 1/4 banana - I used frozen, but fresh would be fine, too
  • 1 tbsp. almond milk, or any other milk of your choosing - I wanted to add the nutty flavor of the almond milk though
  • cinnamon

In a blender, magic bullet, or any other tornadic machine you may have, blend together yogurt, most of a peach (I left 3 slices just for garnish, but that is optional), oats, flax seed, banana, and milk.  Once blended, add in ice cubes and cinnamon to taste, then blend some more!  You can add in the ice cubes right away with the previous ingredients if you have a powerful enough blender.  Once the mixture reaches your desired consistency (i.e. very icy, more liquidy, etc.), serve it in a bowl, cup, or any other glassware you have.  Garnish with almonds, walnuts, and a tad bit more cinnamon and enjoy! I ate this is like a parfait-like soup, but if you prefer to drink it, blend up the nuts into the smoothie mix - otherwise your straw and throat might not have too much fun... 

Simple, fast, refreshing, and filling - perfect for a warm, not-a-lot-of-time-to-be-fancy-in-the-kitchen morning!

Note:  To keep the thicker consistency of the Greek yogurt, blend all the ingredients except the yogurt together.  Then, simply fold the yogurt with the blended peach "sauce" in a bowl!
